Almost there! The longest month of the year is over! Need a nice treat to keep your January goals on track?

Try these healthy super quick protein energy bars, packed with protein, fibre and flavour, a perfect after school, mid morning or lunch time treat!

 

Peanut Butter & Coconut Energy Bars

 

Ingredients

3 tbsp crunchy peanut butter
2 tbsp agave or coconut syrup
3 scoops of Whey Protein – Chocolate or Vanilla flavour
1 tbsp cocoa or raw cacao
1 tbsp of ground seeds, we use chia or flax
3 tbsp of desiccated coconut
35g bar of organic dark chocolate 80%
1-2 tsp of coconut milk or water to bind the mixture

Method

Using a spoon add all the ingredients, except coconut milk or water and desiccated coconut together to form a soft dough.

Slowly add the water or milk if needed until the mixture comes together.

Pour mixture onto tin lined with greaseproof paper and press flat.

Sprinkle with desiccated coconut. Drizzle with melted dark chocolate.

Chill in the fridge for at least 30 mins and cut into bars.

Store in the fridge.
